[Kofuku course dishes] This is a kaiseki plan that brings together fresh seasonal ingredients. Seafood from the Sea of Japan purchased from the Gendase off the coast of Fukui Prefecture, Mikuni Port, Echizen Port, Tsuruga Port, and Hyuga Port. We purchase fresh ingredients directly from local producers, including fresh abalone, turban shells, rock oysters, and new seaweed caught by pole-and-line fishing, bottom trawling, sashimi fishing, set net fishing, and free diving by Ama divers in Mikuni under the gazebo. You can enjoy dishes made with plenty of seasonal ingredients. An encounter with the ``most delicious ingredients'' of the day, a food experience full of live feeling. We cook our food using the optimal method to further enhance the power of each ingredient, allowing you to enjoy it in its best condition. Please spend a quality and luxurious time with the spectacular view from the gazebo. Please enjoy each dish to your heart's content, using seasonal ingredients that Fukui is proud of, and bringing out the original taste of the ingredients. Both dinner and breakfast are served in the dining room overlooking the sea. ●Dinner● We offer seasonal kaiseki cuisine made with carefully selected ingredients, including the best and rarest ingredients of the day. ~ Examples of spring ingredients ~ Red snow crab, flounder, puffer fish, sea bream, throat black, abalone, hair crab, firefly squid, rock octopus, sweet shrimp, Wakasa beef, wild vegetables, new seaweed, etc. ~ Examples of summer ingredients ~ Sweet sea bream, sweetfish, horse mackerel, rock oysters, turban shells, abalone, wild eel, sea urchin, squid, mackerel, bluefin tuna, Wakasa beef, summer vegetables, local fruits (watermelon, melon), etc. ~ Examples of autumn ingredients ~ Throat black, shrimp, sweet shrimp, conger eel, Spanish mackerel, red snow crab, Wakasa beef, matsutake mushrooms, chestnuts, local fruits (pear, shine muscat, grapes), etc. *Subject to change depending on season and stock availability. ●Breakfast● We will prepare a Japanese breakfast using plenty of local ingredients.
